My baking journey here in Dubai started with this eggless cake that i baked and frosted on Noufal's birthday. And it was also my first trial on chocolate ganache to frost the cake. This is Dr. Lakshmi Nairs recipe,for the cake and white chocolate ganache which i happen to see on Magic Oven , a cookery show in kairali channel. Her recipes always works for me and thought to give a try .
The cake turned out really well ,  it was soft, moist and chocolaty that we all loved it. But i was not really happy with the white chocolate ganache, it is supposed to be a pouring consistency but mine become a little thick.It was my first try ,i think i made some mistakes that  the texture didn't came out  as  expected ,also find it difficult to frost the cake neatly and ended up in  spreading the grated dark chocolate all over the white ganache to cover the mistakes.It was supposed to be a white chocolate ganached cake with some dark chocolate shavings on the top just to decorate ,unfortunately when my final product came , i needed to explain others that there is white chocolate ganache under the dark chocolate bed,but taste wise i am satisfied.

Ingredients and spices that need to be Prepare to make Eggless Chocolate Cake:

  1. cake for the
  2. 1 1/4 cups All purpose flour maida
  3. 4 cocoa powder - tbspns
  4. 1 1/2 tsps baking soda
  5. 1 1/2 tsps baking powder
  6. 1 1/4 cups milk
  7. 1 cup sugar powdered
  8. 2 honey - tbspns
  9. 1/2 tsp vanilla essence
  10. 1 tsp coffee instant powder
  11. 3/4 Cup oil (sunflower/corn )
  12. pinch salt
  13. Chocolate For white Ganache
  14. 300 gm chocolate White - (grated)
  15. 200 gms fresh cream
  16. 25 gms butter
  17. as required dark chocolate (to spread on the top of iced cake) shavings

Steps to make to make Eggless Chocolate Cake

  1. Preheat the oven to 180C. Prepare a 9" inch baking pan, by greasing the bottom and sides of pan with butter and dust some flour above it, remove the excess flour from the pan.
  2. Sift together flour, cocoa powder, baking powder, baking soda and salt three times.
  3. Warm the milk on stove top along with sugar,honey,and coffee powder. Stir till the sugar get dissolved well and switch off the flame. Keep it to cool.
  4. Once the milk mixture is cooled, add oil and vanilla essence and mix well.
  5. Add the dry ingredients to the wet  and whisk well without forming any lumps.
  6. Pour the smooth batter into the prepared baking pan and bake it for  45 to 50 mins or until a tooth pick inserted in the middle comes out clean. Take it out from the oven and let it sit in pan.
  7. After 5 mins take it out from the pan and keep it on a wire rack and let it cool completely before frosting.
  8. Prepare the frosting while cake is cooling. Pour the fresh cream to a pan and heat it on low flame until it starts boiling and bubble starts forming on it.
  9. Switch off the flame and add grated white chocolate to the hot cream and mix well that the chocolate should melt completely.
  10. Add the butter and mix well that it should be in smooth and pouring consistency. Let it cool for sometime.
  11. When both the cake and ganache is cooled,pour the ganache over the cake to cover it completely, place a tray or baking sheet under the cooling rack to collect the excess ganache that drips down from the cake.
  12. Sprinkle some dark chocolate shavings over the ganache and you are done.
